I-Have-No-Time-to-Cook Potato Soup

  • 1 bag of frozen Hash brown potatoes
  • 1 package of Country Gravy mix
  • 1 large cans of chicken broth
  • Mix hash browns and broth into a pot or Crockpot and simmer until potatoes are tender.
  • Mix gravy mix in cold water and pour into boiling soup.
  • Let thicken.
  • Don't tell anyone how you made the soup.

Easy Pumpkin Spice Cupcakes

  • 1 15 oz can of Pumpkin
  • 1 box of Spice cake mix
  • 1 egg white
  • Water as directed on cake mix
  • Mix together & put into muffin pans.
  • Bake at 350 for 15-20 minutes.
Cream Cheese Icing
  • 1 pk cream cheese
  • 2 TBL butter/margarine melted
  • 1 cup Powdered sugar
  • 1 Tsp Vanilla
  • Mix until creamy

Low-Fat Bran Brownies

  • 1 low-fat Brownie Mix
  • 1 1/2 tsp baking soda
  • 3 cups fiber cereal (like Kellogg's All Bran)
  • 2 1/2 cups water
  • Mix together brownie mix and baking soda.
  • Mix cereal with water let stand 5 minutes
  • Add brownie mix to cereal mix - bake according to box instructions.

Cajun Chicken (to be served with Pasta)

  • 1-2 lbs of chicken cooked - chopped or shredded
  • 2 TBL Cajun seasoning
  • 1/2 pint whipping cream
  • 1/2 pint Half n Half
  • 1 Stick of Butter - softened
  • Mix all together
  • Cook until Thickened
  • Mix with cooked Pasta of choice
